Cholon Restaurant Concepts is operated by Chef Lon Symensma, who added YumCha to the Cholon concepts in November 2021, and officially opened it's first location in LoDo. As of July 2025, YumCha launched another location within the Milk Market. Inspired by Chef Lon's travels around Asia, this concept provides an exciting, upbeat, and unique dining experience.
